What We Do
Whether it’s veg, meat or fish, we’ll cook it over real charcoal and serve it with sauces made with love.
There is a Mediterranean feel to much of what we do, but this is combined with traditional and international techniques and flavours.
The food we do varies according to what’s seasonal and what you want, but below are a few things we have done before.
We will always try to do what you want, but be warned, we don’t cook processed food or use lesser quality ingredients!
All our meat is locally sourced and naturally raised. Our fish is from trusted suppliers and always responsibly sourced. Our vegetables and salads are almost always organic.
Because we prepare all the food ourselves, we can confidently accomodate your guests that have any food allergies. Please let us know of any potential allergens and we can prepare a seperate meal or adjust our menu accordingly.
We do some great canapés, the list below is just a small sample to get your mouth watering…
Seared Scallops and Green Apple Sauce
Hand linked cocktail sausages with a manuka honey and mustard glaze
Smoked chicken Caesar filo bite with parmesan shavings
Open steak sandwich with caramelised onions and tomato butter
Hoisin duck pancakes with crisp cucumber and spring onions
Baked potato ‘chip’, rare beef with béarnaise sauce
Chilli, coriander and maple marinated chicken sticks with basil aioli
Teriyaki beef with ginger and spring onion dip
Parmesan biscuit, cream cheese, red onion puree and cocktail tomato
Meat options include leg of lamb and whole rib of beef (see our example menus).
Fishy choices include squid, prawns, mussels, scallops and lobster. Whole fish like red mullet, mackerel, trout and salmon cook well too, but only for smaller groups who don’t mind the odd bone.
Vegetables we cook over charcoal include aubergine, peppers of all kinds, portabello mushrooms, asparagus & courgettes. Cheeses of various kinds can be melted over the vegetables too during cooking to give a delicious extra touch. Cooked Halloumi cheese goes well with everything!
None of these lists are exhaustive so if there is something you really fancy and you can’t see it here, then contact us. We are always happy to talk things through.
Salads and sauces are all handmade and can be varied to compliment the food. These include houmous, tsatsiki, tomato relishes, chilli oils, wasabi, potato salads and special green salads.
Breads of various kinds are all handmade or naturally produced to suit the dish of choice. These include, lavash, khobez, grissini or tortillas and wraps.
We are happy to keep feeding your guests until they are finished eating, so seconds, thirds, fourths etc etc are all welcome.
Our food is not formal, it’s fun and often messy. We put an emphasis on superb flavours, the highest quality & super fresh ingredients and cooking the food just right. We love mama nature too, so we make sure we are as kind to her as we are to you.
